Easiest Chewy Sugar Cookies
Makes 14 Cookies
Seriously chewy, buttery, and satisfying, these sugar cookies are so simple to make, and are a great festive treat for the fall and winter holidays!
¼ cup cold vegan butter (½ a stick)
1 cup white sugar
1 tablespoon molasses
1 cup white flour
½ teaspoon salt
2 teaspoon baking powder
1 tablespoon vanilla
1 flax egg: 1 tablespoon ground flax meal, 2 tablespoons water
2 tablespoons vanilla sugar
To make flax egg, mix flax meal with water. Stir and set aside to thicken.
In an electric mixer with paddle attachment, cream vegan butter and sugar. Add vanilla, molasses, and flax-egg to electric mixer, mix until combined.
To mixer bowl, add flour, salt, and baking powder. Make sure everything is well incorporated.
Preheat oven to 350°F (180°C) and grease or line 2 cookie sheets.
Use a mini ice cream scoop or heaping tablespoon to measure out balls of dough. Scoop vanilla sugar into a small bowl, then coat each dough ball in the sugar before placing them 2-3 inches apart on sheet pans (7 balls per tray).
Bake until cookies are golden brown and tops are slightly crackled, 10-15 minutes, depending on how soft you like them. These cookies harden as they cool, so be careful not to over bake them!
Let cookies cool completely on pans, and store any leftovers in an airtight container at room temperature for up to 4 days.
White sugar works just as well for coating the balls of dough, if that’s all you have.
To turn these sugar cookies into equally as delicious snickerdoodles, add 1 ½ - 2 teaspoons cinnamon in with the dry ingredients, and roll the balls of dough in a cinnamon-sugar mixture instead!
