Quick and Easy Mint Brownie Energy Balls
Makes 8-10 Balls
With dates for natural sweetness, cashews for plant protein, and no oil involved, these healthy yet decadent energy balls are the perfect on-the-go snack or dessert. So easy to make, and ready in minutes!
1 cup dates
1 teaspoon mint extract
¼ teaspoon vanilla extract (optional)
2 tbsp cocoa powder
¼ teaspoon salt
¼ cup whole cashews
2 tbsp - ¼ cup mini vegan chocolate chips
Line a cookie sheet with foil or parchment, set aside.
Add all ingredients (minus chocolate chips) to a food processor, processing until a semi-smooth mixture has formed. Fold in chocolate chips.
Next, form into 8-10 even-sized balls and place on sheet pan; they may be a little sticky. If necessary, let balls chill in refrigerator for at least 30 minutes to completely firm up.
Store leftovers in an airtight container in refrigerator for up to a week, or freeze for up to a month.
I use plain and unsalted cashews, but feel free to use roasted and/or salted. If using salted, omit the ¼ tsp salt.
For a smoother and more combined mixture, add 1-2 tbsp warm water as needed (especially for weaker food processors).
For a refined sugar free option, simply skip the chocolate chips, or replace them with your favorite refined sugar free version!
Although I haven’t tried it, I’m sure a blender would work just as well for this recipe.
