Perfect Thin and Chewy Chocolate Chip Cookies

Makes 16 Cookies

Buttery, comforting, and so easy to make, these classic chocolate chip cookies are a fabulous treat for any occasion, and are guaranteed to have everyone coming back for more! 


¼ cup cold vegan butter (½ a stick)

½ cup white sugar

½ cup dark brown sugar, packed

1 tablespoon molasses

1- 1 ¼ cup white flour

¼ teaspoon salt

2 teaspoon baking powder

1 tablespoon vanilla

¼ cup applesauce

½ cup vegan chocolate chips


In an electric mixer with paddle attachment, cream vegan butter and sugars. Add vanilla, molasses, and applesauce to electric mixer, mix until combined.
To mixer bowl, add flour, salt, and baking powder. Make sure everything is well incorporated before folding in chocolate chips.


Chill dough for 10-15 minutes.


In the meantime, preheat oven to 350°F (180°C) and grease or line 2 cookie sheets. 

Use a mini ice cream scoop or heaping tablespoon to measure out balls of dough. Place balls 2-3 inches apart on sheet pans.


Bake until cookies are golden brown and tops are barely crackled, 15-20 minutes. These cookies harden as they cool, so be careful not to over bake them! 

Let cookies cool completely on pans, and store any leftovers in an airtight container at room temperature for up to 4 days.
