Best Ever Chocolate Chip Banana Bread Muffins (1-Bowl and Oil-Free!)
Makes 10 Muffins
Made without oil and with just 1 bowl, these super simple muffins are moist, fluffy, and guaranteed to be the tastiest ones you’ll ever make!

Ingredients
Wet Ingredients:
1 ½ small bananas, or one large banana, mashed
1 cup light brown sugar, lightly packed
¼ cup applesauce
2 tsp vanilla
Dry Ingredients:
1 ½ cups white flour
½ tsp salt
2 tbsp baking powder
1 tbsp cinnamon
½ cup chopped walnuts
⅓ cup mini vegan chocolate chips

Instructions
Preheat oven to 350 degrees Fahrenheit, grease or line a standard 12-cup muffin tray.
In a standard electric mixer with whisk attachment, combine all wet ingredients. Add dry ingredients one at a time, starting with flour and ending with vegan chocolate chips. Mix until everything is combined and a batter has formed.
Using an ice cream scoop, transfer batter to muffin tray, filling each cup a little more than ¾ full. Bake for 20 minutes, or until muffins have puffed up, are golden brown, and a toothpick inserted into the center of one comes out clean.
Let muffins cool for at least 15 minutes in trays before transferring to cooling racks.
Store in an airtight container at room temperature for up to 4 days.
Notes
For the applesauce, you can use sweetened or unsweetened.
These muffins are so customizable, use whatever add-ins you like! The ones listed in the ingredients are just some I’ve found to work well with these muffins, but I’m sure any kind of nuts, dried fruit, or another chocolate add-in, etc. would be amazing as well!
