Simplest Brown Sugar Cinnamon Muffins
Makes 8 Muffins
Donning the ultimate flavor combination, these muffins are moist and tender, yet perfectly fluffy. Eat them on their own, or crumbled over warm or fresh fruit!
2 cups all-purpose flour
1-2 tbsp cinnamon
½ tsp salt
1 tbsp baking powder
½ tsp cream of tartar
½ cup cold vegan butter
½ cup white sugar
1 cup lightly packed brown sugar
½ cup unsweetened applesauce
1 tbsp maple syrup
2 tsp vanilla
Preheat oven to 350 degrees F and line a standard 12-cup muffin tray with cupcake wrappers. Set aside.
In a large bowl, whisk together dry ingredients and set aside.
In a standard electric mixer with whisk attachment, or by hand, cream butter and sugars. Add in applesauce, maple syrup, and vanilla. Slowly add in dry mixture until a batter has formed.
Transfer batter into prepared muffin tin. Bake for 15-25 minutes, or until muffins are lightly golden and a toothpick inserted into the center comes out clean.
Let muffins cool in trays for 10 minutes before transferring to cooling racks.
Store in an airtight container at room temperature for up to 4 days.
I'd recommend cupcake wrappers rather than cooking spray because this makes the muffins easier to remove from the tray.
You may use sweetened or unsweetened applesauce.
