Easiest Spiced Apple Crumble

Makes 6 Servings 

With comforting spiced apples, and a perfect crispy, sweet, and buttery topping, this crumble is the easiest one you’ll ever make!

Ingredients

Apples:


½ cup fresh lemon juice (2 medium lemons)


2 tsp vanilla


¼ cup white sugar


2 tbsp cinnamon


½ tsp nutmeg


5 cups apple, cubed (2 large apples)

Topping:


¾ cup light brown sugar, lightly packed
 

½ teaspoon salt
 

¼ tablespoon baking powder
 

2 tbsp cold vegan butter, cut into chunks
 

2 cups rolled oats
 

Remaining apple liquid

Instructions

In a medium bowl, combine lemon juice, vanilla, sugar, cinnamon, and nutmeg. Add in the apples, making sure they are thoroughly coated. Transfer to a pot with a lid.

 

Cook on medium heat for 15-20 minutes, or until apples are slightly softened, stirring occasionally. 

 

In the meantime, preheat oven to 350° F and grease an 8x8 baking dish. Drain apples over a bowl and set excess syrup aside.

 

In a large bowl, combime brown sugar, salt, and baking powder. Add vegan butter, using your hands to incorporate it into the mixture. Gently fold in oats and remaining syrup from apples. 

 

Dump apples into pan and spread topping evenly over them. Bake until slightly bubbling and browned, about 25 minutes. Serve warm.

Store leftovers in an airtight container in fridge, they should last up to 3 days.

Notes

If you wanted to use dark brown sugar in this recipe, it works fine. However, it may yield a slightly richer, chewier, and darker crumble, which is just as delicious!

In place of apples, pears also work great in this crumble. Just make sure they're not over-ripe, or the crumble won't be as sturdy.

For a quick reheat, I recommend popping this in the microwave for 20-30 seconds, although it won't stay crispy unless you reheat it for a few minutes in the oven instead. 

This crumble is amazing on its own, but adding non-dairy vanilla ice cream and/or vegan caramel sauce takes it to the next level!
